This prawn kofta and kofta curry recipe holds a special place in my journey, beginning in 2014 when I first stepped into the kitchen with the simple hope of cooking and serving. I could never have imagined that the path would one day lead me to presenting a masterclass at the Cheltenham Food and Drink Festival and meeting so many guests who have supported my journey as a patron. I promised them this recipe, and I’m delighted to share it here.

This dish reflects both the warmth of tradition and the joy of sharing food with a wider audience. The kofta can be served as a snack or simmered gently in a rich curry, bringing together prawns, aromatic spices, coconut milk, and the slow-building depth that makes it so memorable.
